I used Jighead's seafood stuffing recipe to make baked stuffed haddock tonight.It was delicious.

* I added a few minced sea scallops to the mix and rolled the fillets over a big glob of stuffing.


Easy Stuffing mix
1 can of chopped clams
1 can of baby shrimp 
1 can of crab meat
3 sleeves of crackers (half saltine half ritz)

I added some Old Bay and parsley flakes

Salt and pepper the fillets
I added butter slices between the fish and the stuffing. 

Bake at 350 for 25 minutes 
Switch the oven to broil to brown off the top of the stuffing. 
Baste the top with the butter in the pan.
