My wife bought a set of kitchen knives from a kid who banged on the door 25+ years ago. They still cut, but certainly not razor sharp anymore. They will sharpen them for free if you mail them in, we need to do it sometime.
There is a high quality knife manufacturer right here in Danbury named Ergo Chef. They have a boning knife and a filet knife that I use for both fish and game. They have an outlet store with very good deals.

I have a whole block of them from 25 years ago. I send them back to get resharpen and they replace anyone they don't like. I've gone to tag and estate sales and have bought them so beat up and sent them back to be sharpen and I get new ones back. Life time to them is a life time. Pricey investment but well worth it.

I remember when our old neighbor was selling them to my parents, I was a young kid at the time, he was telling them how strong the kitchen sheers were. To demonstrate that he asked for a penny and proceeded to cut it clean in half. Still remember that for some reason.

Wife used to sell them when I first met her. We still have them 25 years later and still in great shape. Handles are made of the same things bowling balls are made of. Like others have said, have them sharpened every so often and they should last you forever.
