My wife bought a set of kitchen knives from a kid who banged on the door 25+ years ago. They still cut, but certainly not razor sharp anymore. They will sharpen them for free if you mail them in, we need to do it sometime.

Have a set from 20+ years ago that my parents used and gave to me. Still looks feels and cuts great. Although I do sharpen them from time to time.

There is a high quality knife manufacturer right here in Danbury named Ergo Chef. They have a boning knife and a filet knife that I use for both fish and game. They have an outlet store with very good deals.

Have a full set with block, key as with any knife is keep them sharp as you would know. Quality is excellent, they are pricey but lifetime knives...

When I come home stinking like fish, I know I`ve had a good day....

I have a whole block of them from 25 years ago. I send them back to get resharpen and they replace anyone they don't like. I've gone to tag and estate sales and have bought them so beat up and sent them back to be sharpen and I get new ones back. Life time to them is a life time. Pricey investment but well worth it.

I remember when our old neighbor was selling them to my parents, I was a young kid at the time, he was telling them how strong the kitchen sheers were. To demonstrate that he asked for a penny and proceeded to cut it clean in half. Still remember that for some reason.

As a sidenote, technically I think that is illegal to do.

Wife used to sell them when I first met her. We still have them 25 years later and still in great shape. Handles are made of the same things bowling balls are made of. Like others have said, have them sharpened every so often and they should last you forever.

Good for cutting fins off of fish, gutting etc. Also good for cutting the heads off chickens biggrin

Anything and everything. They come apart easily to go in the dishwasher. I've yet to have to sharpen them and I've used/abused them pretty well over the years. They still cut braided fishing line without a problem.

Also good for cutting crabs in half, they are a very good knife cant go wrong with them.

I have a set, including the shears and a fillet knife. Top quality. The shears are awesome for cutting open any kind of plastic package. I love the fillet knife, and its great at getting through those porgy scales when filleting.

I have this exact same memory. Great knives, and have held up 15+ years.

I got one as a gift for my 40th bday (12 years ago) and the person who gave it to me had the boat name engraved into the blade - that alone is cool chit! Like other above, I have sent it back for service / sharpening. One year they sent me back a brand new blade, and engraved it too, no charge!

Love the shears, use for finning whole seabass.

Last sunday I was at the Subase NEX and they had a rep that was there demonstrating them. So I believe they sell them there. I didn't realize they were that bad ass as I made it a point to avoid the guy in fear of being sold something I didn't want at the time. Now I sort of regret it lol

I have the cutco fishermans fillet knife and love how it the blade extends from the handle. Holds an edge pretty long.

This is pretty cool! I used to sell Cutco knives, about 40 years ago (damn, that makes me old!). We still have them & use them as our main kitchen knives. And yes, I used to cut the pennies also.

Have a large set bought new. Great edge, cuts great. One paring knife has internally broke in the handle and scissors need to be repaired don't cut evenly full length both need to go back. The only one I would not buy again is the fishing fillet knife. It can be set to different lengths but the lock does not hold tight enough, poor design. It is scary sharp though and has the right amount of flex. If it would hold better it would be perfect. The warranty is great just send them back and they will fix or replace. Even if you are not the original purchaser.
