I have the cutco fishermans fillet knife and love how it the blade extends from the handle. Holds an edge pretty long.

This is pretty cool! I used to sell Cutco knives, about 40 years ago (damn, that makes me old!). We still have them & use them as our main kitchen knives. And yes, I used to cut the pennies also.

Have a large set bought new. Great edge, cuts great. One paring knife has internally broke in the handle and scissors need to be repaired don't cut evenly full length both need to go back. The only one I would not buy again is the fishing fillet knife. It can be set to different lengths but the lock does not hold tight enough, poor design. It is scary sharp though and has the right amount of flex. If it would hold better it would be perfect. The warranty is great just send them back and they will fix or replace. Even if you are not the original purchaser.
