I filled the slow cooker for an all day simmer.
I used a drumstick and thigh, and added charred peppers, onion, garlic, orange, and spices such as cinnamon, clove, oregano, and bay leafs.
8 hours later, I shredded the tender taco goodness and served it on soft tortillas with salsa, sour cream, cheese and lime juice.
Ammmmmazzzzzzzing!
This is a great way to utilize the tougher parts of your bird.
