Venison Stew 4/23 - 04/25/23 06:29 PM
I came home from fishing in the storm Sunday and put together a venison stew to simmer all afternoon. Served with garlic toast.
It really hit the spot.

Ok, I just finished supper, but I'd chase it with a bowl of that.

Bill,
I brown the meat in olive oil and remove it
Add a tablespoon of tomato paste and fry it a few minutes to sweeten it
Then add your chopped veggies ( carrots, celery, potatoes, onions) and cook with the tomato paste for a few minutes
Add 4-5 minced cloves of garlic next
Then add 2 boxes of beef broth
Add 6-8 shakes of Worcestershire sauce
Add 1 cup or so of red wine
I add a little browning liquid for color
Salt and pepper
2-3 Bay leafs
Add the meat back to the pot and bring to a boil then reduce to simmer for 3-4 hours, stirring occasionally.
Before serving, I thicken the broth with a corn starch and cold water slurry.
