Sounds obvious to say but you would be surprised and if stuff happens your high and dry if they are not legit. Pull permits also. My last job self employed was 7 years ago and I did it for my daughters MIL. I converted the entire basement of the home they shared into an apartment with a full bath included. I had full coverage and pulled permits so that in the case the house changed hands and was inspected all the upgrades were on record.  I get offers to do jobs all the time but refuse to put a tool on a jobsite without Registration and full insurance. I am done subbing work and only work on the home I live in.]]></description>

The quality of the end product is most determined by everything BEFORE it is placed in the smoker. Bleed your catch as soon as it is caught. Salt water rinse/remove any residual blood. Place in ice chest immediately. Try to brine that day/night if possible. Use your favorite brine. Make sure the recipe, especially the water, salt &amp; sugar are measured accurately. Brine for the desired time; no more no less. Dry for the appropriate time which is depends on the thickness of the fish and if you are doing a hot or cool smoke and the humidity. This will determine the shelf (or refrigerator life) and taste of your product. A good patina indicates the fish is properly dried. You're ready to smoke. Any smoker that is large enough to hold your product with some room for smoke flow and accurately hold your desired temperature (160 -240 degrees Fahrenheit) will work fine. I use a decades old, Little Chief, electric smoker that requires hourly observation/intervention. My son uses a modern electric smoker, adjusting temperatures, turning on/off, etc.  with an app from his phone. My son's is lot easier but we both get great smoked fish. I will eventually go to a more modern smoker. I will probably wait till they develop something that can chase away raccoons which are the biggest fans of my smoked fish. Bottom line is just about any good smoker can produce quality smoke fish. Remember you can't make chicken salad from chicken crap so be meticulous in catching, handling, processing for best results.<br /><br />If you are concerned about the reliability of a smoker with a lot of bells and whistles, buy it from a reputable dealer. Wouldn’t hesitate to buy it again if needed.  Can barely buy a replace my hose for $99 ….so now I have 2 Ryobi powerwashers (1,600’&amp; 1,800 PSI) with 2 guns, 4-5 pressure heads, soap dispenser….and one hose…so in good redundancy shape. <br /><br />Good Luck]]></description>
