Take a spaghetti squash and cut it in half lengthwise Scoop out the seeds and bake at 350 degrees for about an hour in a shallow baking dish
Meanwhile, fine chop onion, garlic and red or green peppers and sauté in some olive oil until just soft Remove the veggies and brown a pound of ground venison Once browned add the veggies back and mix well Add a 16 oz can of tomato sauce, mix this in and and simmer until it begins to boil then shut it off
About now the squash is soft and cooked Pull it out and take 2 forks and scrape the “spaghetti “ out of the rind. Put this into your meat and mix
Return this mixture back into the squash shells Top with what ever cheese you like and bake to melt the cheese for 10 minutes Finish under the broiler for 5 minutes to brown up the cheese. I add crushed red pepper to mine
Excellent! No venison, so used sausage, and made some modifications Cooked spaghetti squash in microwave. did not not put ingredients back in shell, but rather in a casserole dish, and used marinara sauce. Very good!
