Can the Ct. firearms hunting class be used to obtain a long gun permit for purchasing a hunting shotgun?

No you need a back ground check (long gun cert), do yourself a favor and take the class for pistol permit it take care of all the permit problems.

Thanks, I know the pistol permit is the long term solution but I just finished the hunting class and really don't want to take the time to go through another class. I don't have any ambition to own a hand-gun and was hoping I could get the long gun certification (which requires a class but I am not sure the hunting class qualifies) based on my hunting class and background check.

The Hunting Safety course is what you need if all you want to buy is a shotgun/rifle .
IIRC you make a copy of the card and turn it in with the application .
