I am doing a party in december where I will be frying 2 turkeys a couple chickens and about 20 pounds of cod. I cannot wait. Garlic injected turkey breast deep fried may be the best food on earth.

Lot's of people get hurt doing this each year
The best way not to start a fire - is very simple - turn off the flame while initially dunking the bird, in case it spills over. Once it's in and calmed down - spark the fire again.

This is my second year deep frying turkey for thanks giving. Last year it came out increadible.
1. Make sure you put the proper amount of oil in the pot.
2. When lowering into the pot the first time, take your time and do it in small dunks.
3. Do it on a grassy area. Burn the front lawn, not the house!!
4. Keep a fire extinguisher handy.

The only way to eat turkey. Did my fist one a few years ago and now it is the only way. JigHead is right, just trun it off when putting the turkey in and make sure you are out side on the ground with nothing over head.
You can still make Gravey, just take the gilblets out of the turkey and good seperatly, inject the turkey with the marinade the night before and yummy you are good to go.
My turkey takes just long enough for a bottle of good wine and a good cigar. I love Thanksgiving.

Besides the fire - 400 degree oil splatter hurts too - I made a stainless wire harness that you shove into the chest cavity. It hooks into the breasts when you pull up on it. It has a loop on the end of it and I use my 5FT gaff to raise and lower it.
I like the bottle of wine idea Matt - you can keep that cigar though.
Another good thing is that if you not doing it for thanksgiving. IF you have a large enough fryer you can use another smale basket to do wings, oniong rings and other foods makes the turkey even better.
I have been frying turkeys and wings for 5 years now and they are great. The family used to smoke the Turkey for Thanksgiving but now we fry. I never had any problems with fires until last year, I was going to do wings one night at my in-laws house, I was comming over right from work so I gave the wing thawing duty to my father in-law,he didn't do too great of a job. When I put the wings in the oil reacted with the ice and splatterd which caused a fire. I shut the propane off and the fire went out in about 1 min. This year I am inspecting the bird and wings throughly.
