One last piece of advice do not stuff the bird unless you want to see hot oily stuffing shooting 30 feet in the air. From what I hear.
What it does is boil over and you get nice oil running down the pot and on the flame!! Happened to me last year (minus the flame). Lucky that it did not hit the flame.
There was just too much oil in my pot and the turkey was not completely dried. Two critical elements in deep frying turkey.

been using the turkey fryer for a couple of years now. I'm alergic to poultry so I mostly use it for fish frys, I did fry a 14.1lber for thanksgiving this year for the girlfriends house. took almost 5 gallons of oil and was about 3" from the top when it was finally submerged. Seems like almost every time I use the fryer, it rains. Lew

Tell me about it. This year I had to do it in the garage with the overhead door open, just on the edge of the driveway. Never left sight of it and just for good measure kept an extinguisher nearby. Had no problems though, oil level and temp were perfect and in 45 minutes I had a spectacular, juicy bird. It was AWESOME.

I'm a little late in posting this, but I did deep fry a 13 lb turkey for Thanksgiving. It came out great as always. I injected it with butter, broth, Tobasco and lemon juice and I rubbed it with a cajun type salt.
As for the safety side of it, I wont do it within 35 ft of my home (any part of it) and I attend it the whole time. Kids and pets are kept far away. So far, so good.

I'm finally going to get to try a fried turkey for Christmas. I can't wait but have never done it before. I know the trick with the water to set the oil level and I know it needs to be completely thawed and completely dry. Any tips on top of that you guys care to offer. Cooking temp, time, marinade/no marinade, if a marinade any recipes, maintaining a constant temp. It's a propane fryer not electric if that matters.

1.) Never leave the area where you're cooking. 2.) Make sure you have plenty of cold beer so you dont run out while watching the bird. 3.) Usually about 3 minutes to the pound at 350 degrees. 15 pound bird should take approx 45 minutes. 4.) I used a marinade this past year, and like everyone told me, I couldnt even tell I used it so why bother. 5.) Did I mention the beer? This is a crucial step.

here's 1 tip for you. Coat the outside of the bird in yellow mustard. You will not taste it when it's cooked and it keeps the skin from turning black. You will get that nice golden brown cooked in an oven look. And beer is good too!!!!!
