Make sure you have a deer kill incident report if you pick up a road kill. If you don't then you are in illegal possession of a deer. The state police or local PD can issue one if a deer is killed by a motor vehicle.

Other than that, as long as you have permission of the property owner. The only other suggestion I would make is to sit upwind of the road kill!
